But, Lemon Curd isn't famous among Asian people. Lemon Curd is widely used in western countries, Europe as well. But, my friends, my granny, my aunt, or even my Mom might never heard of it. (me too! before I discover it from Rachel Khoo cooking show "little Paris kitchen")
Everyone can make it, I recommend you Please Try it! the homemade Lemon Curd will make you want to make it again, and again, and again..

I first tried the recipe from www.journeykitchen.com. Don't Worry, this is easy peasy recipe that everyone can do.
it's quick, depend on the volume you choose to make. This recipe is the basic one.
Ingredients
- 5 tbsp fresh lemon juice
- 4 tbsp butter
- 3/4 cup granulated sugar
- 2 eggs
- 2 egg yolks
- 1 tbsp grated lemon zest
Method
- In a steel bowl whisk together all the ingredients except the butter.
- Bring a pot of water to slow simmer and put the steel bowl on it whisking all the way. (you don't want it to curdle). Of course you need to make sure the size of your pot and the steel bowl is such that it fits right in.
- Once the mixture thickens, to coat the back of the spoon take it off the pot. Add in the slab of butter and whisk well so the butter melts into the mixture. Let cool and transfer to clean jar. Put cling film on it before closing the lid and refrigerate overnight. It keeps up to a week in a refrigerate.
*sometimes I lessen the sugar, because I cannot consume too much sugar, for more creamy taste, I add some yogurt or milk. based on your creativity.
I got really excited during my first try, because the aroma smells so good! I'm not lying!
